White Miso is fermented in the traditional Japanese way, using Carolina Gold Rice from Marsh Hen Mill (Edisto Island, SC) for the koji and organic Pennsylvania soybeans (New Covenant Farm).  This is a younger miso, aged for a few months rather than years.  As such, it is sweet, light, and lower in sodium than more intense misos, while still packing an umami punch.  Use White Miso for a quick soup or to fortify or season broth, or get creative and use in vinaigrettes, pasta dishes, or anywhere you might use salt.
