Gochujang is a Korean-style fermentation, achieving similar results to a miso, with a slightly different method using organic Pennsylvania soybeans (New Covenant Farm) and organic koshihikari rice from Next Step Produce (Newburg, MD), traditional dried Korean hot peppers and malted barley flour (Castle Valley Mill, Doylestown, PA - the barley grain itself is PA grown and malted by Deer Creek Malthouse outside of Philadelphia) fermented over a year until the paste is spicy & sticky with sweetness, with a deep, earthy funk.
